What we don't eat we keep for the year in one of the thousand old-fashioned ways of preserving Sweetening olives, drying lavender in bunches, hypericum oil, cooking jams, drying shells, preparing natural sweets, lacto fermenting or dehydrating blackberries, removing the outer shells of walnuts and drying the fruit, opening some to make salted walnuts for the year, making flower water, sugar-free quince jelly... These are just a few of the thousand and one ways in which we can preserve food, especially without a fridge or freezer, as here who knows if the electricity will go out and we must always be prepared to take care of food in ways that do not require electricity. In this way we also keep alive the delicious ways of preserving that have historically fed so many with homemade products made with so much love. To understand the value of each food produced with so much care: the time behind it, the preparations, grandma's tricks, the colours, the company, the laughter, the music, the smells... and to fall in love together with every bit of food that this beautiful land gives us. Honour all this sacred abundance. You will take a little piece of this preserved harvest home with you.
